6“ green tea cake recipe

Eggs: 2

Milk: 28g

Corn oil: 23g

Green tea power

Low-gluten flour: 32g

Granulated sugar: 28g

A little lemon juice (or white vinegar)

六寸綠茶蛋糕配方

雞蛋:2個

牛奶:28g

玉米油:23g

綠茶粉

低筋麵粉:32g

細砂糖:28g

檸檬汁(或白醋)少許



製作步驟:

1. Separate the egg liquid: separate the yolk and the egg white in the egg and pack them.
1.分離蛋液:把雞蛋裡的蛋黃和蛋清分開並裝好。


2. Egg yolk Mixture: mix milk, egg yolk liquid, green tea powder (matcha powder), and low-gluten flour. Low-gluten flour needs to be divided into three times with a strainer and mixed into the egg mixture.
2.蛋黃液製作:把牛奶,蛋黃液,綠茶粉(抹茶粉)還有低筋麵粉混合。低筋麵粉需要分三次用過濾網混合到蛋漿裡混合



3. Egg White Mixture: Mix the egg white, sugar (add in three times) and a small amount of lemon juice (white vinegar) together with a whisk and mix well (first time add sugar and stir until large bubbles appear, second time add sugar and stir until For small and medium-sized bubbles, add sugar for the third time and stir until the bubbles disappear, and the egg white liquid will eventually become stuck to the container, and it will not fall after the container is reversed.)
3.打發蛋清:把蛋清和糖(分三次加入)還有少量的檸檬汁(白醋)混合到一起用打蛋器混合攪拌均勻(第一次加糖攪拌至出現大氣泡,第二次加糖攪拌至中小型氣泡,第三次加糖攪拌至氣泡消失,蛋清液最後大發成沾住容器,在容器反轉後也不會掉下的狀態最佳)



4. Final Mix: Finally, mix the two sets of egg mixtures prepared before and stir together (in 3 times, take out the appropriate amount of egg white mixture from the egg white mixture (step 3) and put it in the egg yolk liquid and stir together. )
4.混合蛋黃和蛋清液:最後把之前準備好的兩組蛋液混合到一起攪拌(分3次從蛋清混合液(步驟3)裡取出適量的蛋清混合液放到蛋黃液體裡一起攪拌均勻。)




5. Bubble Free: Pour the evenly mixed step 4 into the corresponding oven container (or inner pot of the rice cooker). Pick up the container filled with cake liquid with both hands and let the container do free fall from a low place on the tabletop to the tabletop several times. Gravity will make the cake liquid evenly discharge excess bubbles evenly.
5. 擠壓多餘氣泡:把混合均勻的第4步驟倒入相應的烤箱容器(或電飯鍋內鍋)。雙手拿起裝滿蛋糕液的容器讓容器從桌面上不高處向桌面做自由落體若干次,重力會讓蛋糕液均勻第排出均勻的多餘的氣泡。





6. Bake/cook the cake: place the cake container with the cake liquid in an oven preheated to 290F (Fahrenheit) for 40 minutes/ Or put it in a rice cooker to cook!
6. 烤/煮蛋糕:裝好蛋糕液的蛋糕容器放在事先已預熱到290F(華氏度)的烤箱裡烤40分鐘即可/ 或放入電飯鍋以煮米飯時間煮熟即可!
